A mouthwatering summer salad that consists of chilli biltong, fresh tomatoes, fior di latte mozzarella and basil pesto.
- 200g chilli biltong
- 350g exotic tomatoes
- 150g fresh fior di latte mozzarella
- 3 tablespoons basil pesto
- a handful of basil leaves
- olive oil to serve
In a large salad bowl, arrange cut tomatoes, mozzarella and biltong.
Spoon over basil pesto.
Garnish with basil leaves and serve with olive oil.
