This tasty South African dish is the perfect meal whether you are looking for a quick easy meal or if you are cooking for the entire family. Give this recipe a try for a great tasting dish.
8-10 chicken pieces
500 ml amasi
4 garlic cloves, bruised
2 onions, cut into quarters
Juice and grated zest of 1 lemon
30ml Robertsons chicken spice mix
4 rosemary sprigs
30ml olive oil
Lemon slices or wedges
Grease an ovenproof dish with non-stick spray.
1. Put the chicken, amasi, garlic and onions in a marinating dish. Mix well and leave to marinate overnight.
2. Preheat the oven to 180°C. Remove the chicken, onion and garlic from the marinade and arrange in the oven-proof dish.
3. Season the chicken with the lemon juice, zest and spice mix. Tuck the rosemary between the chicken pieces and drizzle the oil over.
4. Bake for 45-60 minutes or until golden brown and done. Serve with lemon slices or wedges
